With Cinco de Mayo coming up in less than a month, it’s time to think about how you’ll celebrate! Guacamole is one of the most versatile Mexican foods because it tastes great in a variety of dishes. It’s not just for tacos! Here are some unique ways to use guacamole this Cinco de Mayo:
Guacamole Ice Cream
Did you know that you can make ice cream without an ice cream maker? To make guacamole ice cream, start with 1/2 cup of guacamole that has been blended until smooth with an electric mixer. Add the guacamole, one can of sweetened condensed milk, and two tablespoons lemon juice to a blender and pulse until smooth. Pour the mixture into a large mixing bowl and fold in the contents of a twelve-ounce container of whipped topping. You can use twelve ounces of real whipped cream instead if you like. Freeze until solid, which should take at least four hours. Scoop and serve directly from the mixing bowl!
Guacamole Pizza
Forget about pizza with boring tomato sauce! Guacamole makes the traditional pizza a lot more interesting. You can either follow
this recipe or use your own pizza recipe and then replace the tomato sauce with guacamole. All you need to do is roll out your favorite pizza dough, spread on the guacamole, add your favorite shredded cheese, and then add any topping that you want! Good toppings for guacamole pizza include olives, onions, hot peppers, and chicken. Instead of mozzarella cheese, try Monterey jack, which has a spicy kick to it.
Guacamole and Strawberry Smoothie
Instead of making the same old smoothie recipe, try putting guacamole in yours! It pairs especially well with strawberries because the strawberries give the smoothie a sweet flavor without overpowering the mellowness of the guacamole. Add one cup frozen strawberries, ½ a banana, two tablespoons of guacamole, and two cups of milk, juice, soy milk, or almond milk to a blender and pulse until smooth. Pour into a glass and enjoy! You can also use other berries such as blueberries and raspberries instead of the strawberries for a refreshing change of pace.
Guacamole Grilled Cheese
Guacamole and melted cheese are natural companions! They both have a creamy texture and when the cheese melts, the guacamole gets warm and gooey. To make guacamole grilled cheese, I just slather both sides of the bread with guacamole, add my favorite cheese, and
grill as usual. My favorite cheeses to use for this recipe are Monterey Jack, cheddar, and Brie. For Cinco de Mayo, Monterey jack is a great choice because it’s a bit spicy. Sometimes, I add some chopped, fresh tomato with the cheese before I throw it onto the grill.
