Popcorn is one of many foods that taste especially good when coated with chocolate! In this recipe, freshly popped popcorn is formed into balls and dunked in semisweet chocolate. The recipe is incredibly versatile, so be sure to check out our variations for even more ideas!
Popcorn Chocolate Truffles
Adapted from Keep It Kind
Makes approximately 20 truffles.
1 cup popcorn kernels (or 4 cups already popped popcorn)
1/2 cup light corn syrup or agave syrup
1 cup semisweet chocolate chips
1 teaspoon coconut oil
Candy sprinkles, optional
Pop the popcorn using any method you desire. 1 cup of popcorn kernels should yield around 4 cups of popped popcorn. If you don’t want to pop the popcorn yourself, feel free to use 4 cups of store-bought, plain popcorn.
Add the popcorn to a large mixing bowl. Drizzle corn syrup over the popcorn and toss gently with a rubber spatula to coat.
Melt the semisweet chocolate chips and coconut oil together using a double boiler or the microwave. If you decide to use the microwave, heat the chocolate in 15-second increments, stirring the chocolate well after each segment to prevent the chocolate from burning. Set aside.
Using your hands, shape the popcorn mixture into balls and place them on sheets of waxed or parchment paper. Four cups of popcorn should make approximately 20 popcorn balls. Let them set for about 5 minutes on the counter top.
Put one popcorn ball on a slotted spoon and dunk into the melted chocolate. Place back on the parchment or waxed paper and sprinkle with candy sprinkles. Repeat until all the popcorn balls have been covered in chocolate. Let set on the countertop until completely cool.

Caramel Popcorn Truffles. Make a batch of caramel popcorn balls but shape them smaller than the recipe requires. Dunk in melted chocolate and top with candy sprinkles, if desired.
Peanut Butter Chocolate Truffles. Mix ¼ cup light corn syrup or agave syrup with ½ cup peanut butter. Melt in the microwave on high for about 30 seconds, or until the peanut butter is melted. Drizzle over popcorn and toss gently with a rubber spatula to coat. Form the mixture into balls and follow the rest of the recipe listed above.
Marshmallow Popcorn Truffles. Make a batch of marshmallow popcorn treats. Form the treats into small balls using your hands and let set on sheets of parchment or waxed paper. Follow the rest of the recipe listed above.
Rocky Road Popcorn Truffles. To make these popcorn truffles, you’ll want to follow the “marshmallow popcorn truffles” instructions, above. When preparing the marshmallow popcorn treats, however, add 1 cup of peanuts with the popcorn.
White Chocolate Popcorn Truffles. Follow the recipe listed above, but use 1 cup white chocolate chips or white candy melt instead of semisweet chocolate chips.
