I love a Thanksgiving sandwich as much as the next person, but sometimes (especially if you hosted the dinner) you have way more leftovers than you know what to do with. Every year after I host Thanksgiving, I make soup out of the turkey carcass. There’s nothing like homemade turkey soup.
