If you’re feeling healthy – you can skip the carbs and put the mixture on a bed of greens for a fresh and filling fajita salad. Mexican food is probably my favorite genre. I crave it. This Chicken Tamale Casserole fits the bill with chicken and lots of cheese packed on a soft cornbread-like crust.
