What’s great about this dish is that it’s so simple to make and you can literally eat it for days. It reminds me of one of my favorite places (Ahem, Chipotle), and you can top it with anything you want. A dollop of sour cream, avocado wedges, melted cheese or crumbled tortilla strips are all good options.

This dish comes together so fast. Throw it in the slow cooker, let it ride and voila – dinner! What I like about this is you can put the chicken atop salad or serve it with a starch and a vegetable, all depending on the preferences of your family.

Coming home to dinner ready is one of life’s simple pleasures. With these fajitas all you have to do is shred or slice the chicken and put the mixture into tortillas! If you’re feeling healthy – you can skip the carbs and put the mixture on a bed of greens for a fresh and filling fajita salad. Repurpose the left overs into quesadillas, burritos or more salads for the work week.

Grilled Herbed Chicken & Potato Foil Packs

So easy and full of flavor. The chicken cooked inside the foil packs stays juicy and the potatoes are creamy and cooked through. Throw some green beans in a foil pack on the same grill and you’ve got a complete meal with no dishes!

Throw all the ingredients right on one pan with a ton of flavor and in 40 minutes you’ve got dinner and only ONE pan to wash. I love ranch flavored anything (Enter: Ranch Popcorn) and so this is a total game changer for me.

Skillet Lasagna

Okay – what a dream to be able to make lasagna and prepare such an incredible comfort food in only 40 minutes? AND in one pan?? This lasagna does NOT skimp on flavor and tastes just like the real thing. Throw in some garlic bread and you’re just asking for a food coma.

Chicken Pot Pie Casserole

Using crescent rolls to top this pot pie, is a quick tip to get this done fast. Everyone will THINK you were working hard all day rolling out dough – just have it be your little secret. This comes together quickly by preparing all your ingredients before everything goes into the casserole.

Chicken Tamale Casserole

Mexican food is probably my favorite genre. I crave it. This Chicken Tamale Casserole fits the bill with chicken and lots of cheese packed on a soft cornbread-like crust. This is definitely something I am down with. Try it – I just dare you. Rotisserie chicken is a great option here (and with most chicken dishes) to save time in a pinch on week night dinner prep.

I’m obsessed with lettuce wraps. I always order them when I go out to eat if they’re available. Making them at home is SO easy. Prepare this dish as the recipe says and feel free to top them with anything you want. I love bean sprouts, shredded carrot, and sliced cucumbers on mine. Cilantro is also a delicious topping for some fresh flavor. The filling is so packed with flavor and in a creamy sauce, so you don’t really need an added dipping sauce.
