When A Friend Is A Vegetarian

I like meat. I like baby-back ribs with BBQ sauce and crispy-coated rack of lamb and rib-eye steaks, medium rare. I loved my mom’s pot roast and my grandmother’s roast chicken with the meat falling off the bones. Today, a number of people are vegetarian. This dismays my husband and me, only in planning a dinner party. When we think of what to make cook, we usually start with the meat. Then the accompanying side dishes. With vegetarians, it seems like it’s all side dishes.

What is Gourmet?

When I was young and married (and a poor graduate student), I gave a dinner party and served something called five-can casserole. This dish involved cream of mushroom soup, fried canned noodles and canned chicken. The result wasn’t very good. Today, the thought of “canned chicken” makes me cringe.

The other day in a cleaning frenzy of the kind that does not often consume me, I found a trove of forgotten photographs in the back of the linen closet behind a tangle of no-longer-used sheets. Plopping down to the floor with them, I held them, one by one in my hand – some for a long time – as I sat on the floor.
