This raspberry eruption cake is one of the best cakes I've ever eaten! It has a vanilla cake "crust" filled with a thick raspberry mousse with fresh raspberries and small chunks of cheesecake in it. It is topped with thin slices of white chocolate. One of the best parts of the cake is that it comes frozen and is already sliced into 12 large pieces. Each slice has paper on both sides so you can easily take one slice and keep the rest in the freezer. This is an indulgence worth spluring on!
